yes I am and I did! I love making all my own food, seriously I am LOVING IT! Just another creative outlet for me!
Here is what I made this weekend.
Gnocci with mushroom white sauce and homemade garlic bread (ok only the spread is homemade). Trust me the gnocci is under there somewhere!
Veggie burgers from scratch. They were a bit salty, once I work that out will post a recipe.
Baked Seitan, oh my GORDON this was good. The recipe can be found here!
and… Zuccinni Bread…. I bought a tonne of these guys and needed to use them up!

1 1/4 cups flour
1 cup unsweetended cocoa powder
1 3/4 cup sugar
2 tbps syrup
2 cups vegan carob chips
1 medium banana
1 1/3 cups unsweetened applesauce
Preheat the oven to 350°F
Mash the banana thoroughly in a large bowl
Add the applesauce, flour, sugar, cocoa powder and chocolate chips
Stir all the ingredients until mixed
Pour the batter into a 9×9 glass baking dish (grease with vegan margarine)
Bake for 35 to 40 minutes

Wow! this weekend disappeared, must have been the lychee martini’s from last night 🙂
So as per usual, this was my cooking day! thank goodness as I have a crazy week ahead
Here are all the goodies:
Cranberry muffin
pizza (with the colby cheese from the uncheese cookbook), I did it as a faux meat lovers
brownies that sunk in the middle, but still tasted YUMMERS (still working on the recipe and will post when I figure out how to keep it from falling in the middle)
barley stew for the slow cooker (recipe below)
2 cups barley (washed)
2 cups Caylen chopped (think that’s how you spell it, its a veggie you buy in china town)
1 large carrot diced
1 small sweet red pepper diced
6 spring onions diced
1 small onion diced
3 cloves garlic crushed
2 ribs of celery diced
1 cup TVP
1 cup mushrooms sliced
1 small zuchinni diced
2 cup baby bok choy
6 cups vegetable broth (or enough to be about 1 inch below the rim)
1 tsp oregano
1 tsp marjoram
pepper to taste
cook on high for 4 hours in your slow cooker!

I wanted pizza in the worst way. I was too lazy to make the crust so I bought Organic Pizza dough. Next time I will make it from scratch. I need to put those years as a teenager, working in a pizza joint to use.
That’s right, when I was a teen I made pizza. Surprise. I worked at Pretsy’s Pizza, it was run by two of the most amazing people. Gord and Donna Prestwell. They took care of their girls.
Here is how they turned out 🙂
Pizza 1 (spinach, olives, onions, faux cajun chicken, the cheese I made)
Pizza 2 (asparagus, olives, onions, faux canadian back bacon, the cheese I made)
Here is the recipe for the sauce:
4 to 5 gloves of garlic crushe (more or less depending on how garlicy you like it)
1 16 oz can crushed tomatos
1 5.5 oz can tomato paste
1 tbsp oregano
salt and pepper to taste.
oil for cooking
Saute the garlic till it starts to brown, then add the rest of the ingredients. Bring to a boil then simmer for about 30 minutes. You want the sauce to thicken up a bit. Runny pizza sauce is gross!

Since I became vegan I have been craving french toast. It was our Sunday breakfast growing up and my dad always made it for us. Topped with real maple syrup and butter that came from my grandfather’s farm. YUM!
I found a recipe but wasn’t completely satisfied with it, so I took the general idea and changed it up a bit. I am still working on it, so when you try this please give me feedback.
Recipe:
makes about 8 if you use medium slices of whole wheat bread
1 cup vanilla soy milk
3 to 4 tbsps corn starch (depending how thick you want the coating on the bread)
1/2 cup chick pea flour (do not use any other kind, this is the only one that works)
1 tbsp cinnamon or nutmeg or mix up both
Oil for the frying pan
Bread.
Mix the soy milk with the corn starch and flour, mix well. Right before you are about to start dipping your bread add the cinnamon.
Heat up your pan.
If using fresh or soft bread don’t leave it in the mixture too long, the bread will fall apart. 😦

Banana Bread
I had a tonne of ripe banana’s in the freezer so decided to make a couple loaves of banana bread. I am trying to veganize my mom’s recipe and am still working on it, so no recipe just yet. I may change my mind and post it as I want others to try it out.
Lemon Squares
One of my favourite forums on the planet can be found over at theppk.com. I was in the kitchen forum when Isa proclaimed she invented vegan lemon squares. I LOVE lemon squares and the fact there is a vegan version made me happy. So I made them. When they were done I was confused. Why aren’t they yellow… then I realized… it’s because I used raw sugar, which is brown. To get yellow lemon squares you need white sugar. Oh well, they are super delish anyway!!!!! Here is where you will find the recipe, you will need to scroll down a bit.
