Wow! this weekend disappeared, must have been the lychee martini’s from last night
So as per usual, this was my cooking day! thank goodness as I have a crazy week ahead
Here are all the goodies:
Cranberry muffin
pizza (with the colby cheese from the uncheese cookbook), I did it as a faux meat lovers
brownies that sunk in the middle, but still tasted YUMMERS (still working on the recipe and will post when I figure out how to keep it from falling in the middle)
barley stew for the slow cooker (recipe below)
2 cups barley (washed)
2 cups Caylen chopped (think that’s how you spell it, its a veggie you buy in china town)
1 large carrot diced
1 small sweet red pepper diced
6 spring onions diced
1 small onion diced
3 cloves garlic crushed
2 ribs of celery diced
1 cup TVP
1 cup mushrooms sliced
1 small zuchinni diced
2 cup baby bok choy
6 cups vegetable broth (or enough to be about 1 inch below the rim)
1 tsp oregano
1 tsp marjoram
pepper to taste
cook on high for 4 hours in your slow cooker!
