Here is what you need!
2 cup instant gluten flour
2 cups water
1 tsp soy sauce
12 cups broth (see below)
Broth
11 3/4 cup water
1/4 cup soy sauce
mix the instant gluten, 1 tsp soy sauce and 2 cups water. mix quickly. it’s best to use your hands, this way it doesn’t get lumpy. once mixed knead the dough for about 5 minutes. next roll it into a log and cut into 6 even pieces.
place the seitan pieces in the cold broth. once the seitan is in broth, turn it on to boil. once it has boiled simmer for one hour.
before removing the seitan from the broth make sure it has all cooled down to room temperature. then you can cut it to the size you want it
